New England Clam Chowder vs. Manhattan Clam Chowder – What’s the Difference?
Clam chowder has been a favorite hearty soup choice for New Englanders for decades. And, the love for this rich and hearty soup has only grown, having spread to restaurants and kitchens across the country and in parts of Canada. In most variations of this delicious chowder, ingredients include diced potatoes, salt, onions, and of course, clams. Most chowder aficionados enjoy their soup with saltine crackers or small, hexagonal oyster crackers.
But, did you know that not all clam chowders are the same? Though Austin’s Cabana Café serves Cabana Clam Chowder, this version is more like a New England Clam Chowder, which is creamy due to milk or cream, which gives the soup a recognizable white color.
Manhattan clam chowder, on the other hand, is red and thus strikingly different. This Manhattan variation has a thinner broth and is made with tomato and tomato paste instead of cream or milk. And Manhattan Clam Chowder also has carrots and celery added to the mix, and sometimes green peppers and thyme are added. Some chefs tend to add garlic for an extra boost of flavor as well.
As it happens, there has been a friendly battle for generations as to which chowder is better. And it comes down to personal taste or the type of chowder you enjoyed throughout your childhood. This said New Englanders tend to prefer New England Clam Chowder. But New Yorkers don’t necessarily prefer Manhattan Clam Chowder. As alluded to earlier, the Austin’s Restaurant Group serves a delightful variation of the New England Clam Chowder, called the Cabana Clam Chowder. You can find this delicious concoction on the menu at Cabana Café, one of several popular Litchfield Beach restaurants offering both a beach bar and outside dining.
